Straw yellow in color with very fine bubbles. Creaminess and toasted and smoky notes. Fennel amidst a bed of brioche, chamomile, and citrus. It displays clear aniseed notes, slightly toasted bread, roundness, and balance. The oak contribution is more perceptible on the nose than on the palate, though subtly. Dry but with a honeyed texture and a glyceric tactile sensation. Notes of white flowers and fruit, and a hint of water peach. Very well integrated carbonation. Very good acidity in a sparkling wine of special complexity.
